Vegan Taco-Inspired Stuffed Peppers

Ingredients

- Bell peppers (assorted colors)

- Cooked quinoa or rice..

- Black beans, drained and rinsed..

- Corn kernels (fresh or frozen)

- Diced tomatoes

- Diced onions

- Minced garlic

- Taco seasoning

- Salt and pepper

- Avocado slices

- Chopped fresh cilantro

- Lime wedges

Instructions

1. Preheat the oven to 375°F (190°C).

2. Cut the tops off the bell peppers and remove the seeds and membranes.

3. In a mixing bowl, combine cooked quinoa or rice, black beans, corn kernels, diced tomatoes, diced onions, minced garlic, and taco seasoning. Season with salt and pepper to taste.

4. Stuff each bell pepper with the quinoa and bean mixture, pressing down gently to pack it in.

5. Place the stuffed peppers in a baking dish, and cover with aluminum foil. Bake for 25-30 minutes, or until the peppers are tender.

6. Remove the foil and bake for an additional 5-10 minutes to lightly brown the tops.

7. Serve the stuffed peppers topped with avocado slices, chopped cilantro, and a squeeze of lime juice. Enjoy!

Serve alongside a fresh salad or with vegan sour cream and salsa for dipping.
